4 potatoes, peeled and cubed
15 ml (1 T) ginger, chopped
4 garlic cloves, chopped
2 tomatoes, chopped
45 ml (3 T) oil
2,5 ml (½ t) cumin seeds
5 ml (1 t) mustard seeds
2,5 ml (½ t) coriander seeds
1 onion, sliced
2,5 ml (½ t) turmeric
5 ml (1 t) cumin
5 ml (1 t) smoked garam masala
5 ml (1 t) chilli powder
1 tomato, cut into wedges
1. In a pot filled with water, add potatoes, season with salt and place on high heat for 10 minutes or until almost tender.
2. In a blender or a mortar and pestle blend ginger, garlic and tomatoes until smooth.
3. Heat oil in a pan on medium heat, and add cumin, mustard and coriander seeds. Once seeds start to pop add onion and cook until translucent.
4. Stir in garlic and tomato mixture and add the turmeric, cumin, garam masala and chilli powder.
5. Cook for 2 minutes and stir in the potatoes. Cook until potatoes are fully cooked and stir in the tomato wedges.
