30 g butter
6 jalapeño chillies, chopped
5 ml (1 t) chilli flakes
200 g mushrooms, sliced
salt and pepper
60 ml (¼ c) sweet chilli sauce
30 ml (2 T) water
800 g readymade bread dough
125 ml (½ c) grated Cheddar cheese
1 Preheat the oven to 200 °C. Grease a large baking sheet.
2 Heat the butter in a frying pan over medium heat until foamy, stir in the chillies and chilli flakes and cook for 2 minutes.
3 Add the mushrooms cook until almost tender. Season with salt and pepper, pour in the sweet chilli and water simmer for 10 minutes over low heat.
4 Roll out the bread dough on a lightly floured surface until flat and cut into rounds using a side plate as a guide. Transfer to the prepared baking sheet and allow to rise in a warm place for 10 minutes or until double in volume. Bake for 15 minutes or until golden on top.
5 Put cheese on one bread disc, top with the mushroom mixture and cover with another bread disc. Repeat with the remaining ingredients. Slice and serve.
