Feel like spaghetti bolognese – but without meat? Here’s a fabulous Meafree Monday recipe for you.
Preparation time: 5 min
Cooking time: 25 min
Serves 4-6
- 15 ml (1 T) olive oil
- 1 large red onion, chopped
- 3 garlic cloves, crushed
- 500 g mixed mushroom, roughly chopped
- 1 can (400 g) chopped tomatoes
- 5 ml (1 t) dried basil
- 5 ml (1 t) dried oregano
- salt and freshly ground black pepper
- 15 ml (1 T) brown sugar
- 250 g spaghetti, cooked according to the packet instructions
1 Heat the oil in a large saucepan, add the onion and stir-fry until golden brown.
2 Add the garlic and mushrooms and sauté for 10 minutes. Stir in the canned tomatoes, reduce the heat and simmer for 10 to 15 minutes.
3 Season with the herbs, salt and pepper, add the sugar and simmer for another 5 minutes. If the sauce is too dry, add 125 ml (½ c) water.
4 Serve with the cooked spaghetti.
