3 Delicious and easy ways with spinach

Spinach isn’t just affordable but also high in vitamins and antioxidants.   Add this healthy green vegetable to your favourite dishes and see how it complements the taste and texture.


Spinach pesto

3 x 250 ml (3 c) baby spinach, 250 ml (1 c) fresh basil leaves, 250 ml (1 c) pecan nuts, 1 clove of garlic, 125 ml (½ c) Parmesan cheese, salt and pepper, 125 ml (½ c) olive oil. In a blender add the ingredients together except the olive oil. While the ingredients are blending pour the olive oil in slowly until the mixture is well combined. Add the pesto to your favourite pasta or serve on toast.


Creamed spinach

1 onion (diced), 1 kg spinach leaves, 60 ml (¼ c) butter, 60 ml (¼ c) flour, 250 ml (1 c) cream, 250 ml (1 c) milk, salt and pepper. Fry the onion and spinach. Set aside. The cream and milk should be stirred in slowly together. Add the butter and flour to a saucepan and slowly stir in the milk.  Add the spinach and onion mixture to the milk mixture. Stir until thickened and season to taste. Serve with roasted chicken.


Spinach quiche

1 kg spinach chopped, 2 eggs whisked, 250 ml (1 c) milk, 375 ml (1 ½ c) grated Cheddar cheese, 2 wheels feta, 1 x 500 g roll of ready-made short -crust pastry, salt and pepper. Preheat the oven to 180 °C and line a baking tin. Flash fry the spinach until soft and mix the eggs and milk together in a separate bowl. Put the spinach and cheeses into the lined pastry. Pour the milk mixture over and bake in the oven for 45 minutes or until the quiche is set. Season with salt and pepper.
